1935 Chef Bert Sachse of the Esplanade Hotel, Perth, Western Australia created the pavlova, named after Anna Pavlova (1881 - 1931), the Russian ballerina whose Australian tours in 1926 and '29 had been very popular. The pavlova, a whipped cream-filled meringue dish usually topped generously with passionfruit, strawberries and/or Chinese gooseberries (kiwifruit), is considered the national dessert of Australia (we have a recipe in the Book of Days) ...
